Soft Batch Frosted Vanilla Cookies
A Lofthouse style cookie recipe. Fluffy and soft vanilla cookies with vanilla frosting. A classic recipe you’re sure to love!
Hey guys! I’m Rachel from Baked by Rachel. I’m happy to be filling in for Katrina while she’s out of the kitchen. I know we’re all hoping to see her back to creating fun recipes real soon! But until then… you’ll have to put up with myself and other blogger friends attempting to entice you like Katrina would!
When I was deciding what to make, I wanted it to be super special. I asked Katrina what her absolute favorite dessert is. She surprised me by saying just about anything vanilla. I think vanilla is often overlooked. People jump to chocolate or even pumpkin when it comes to this time of year, but vanilla? Poor vanilla. It’s delicious, so let’s not forget it – k?
I knew instantly what I wanted to make after she made her vanilla declaration. Lofthouse style cookies. I’ve seen them all over the place but I’d never made one. And lately I’m on a total cookie fix… from soft batch pumpkin chocolate chip cookies to perfect s’more cookies and much more, so it seemed fitting to finally tackle the cookies I swear I’m the last to make. But I took it a step further. I couldn’t stop at just making a vanilla version, nope… I made a pumpkin version too! But you’ll have to stop by to grab that recipe!
These cookies lived up to every expectation one might have for a soft batch vanilla cookie. They’re soft and fluffy while having the perfect amount of vanilla flavor. Making these extra special is the vanilla frosting and rainbow sprinkles. My kids were especially fond of the sprinkles for obvious reason. Can’t say I blame them one bit.
Thanks so much for having me and I hope you enjoy the cookies!

- 2 1/2 C powdered sugar
- 2-3 Tbsp unsalted butter, softened
- 1/2 Tbsp vanilla extract

- Preheat oven to 350°F.
- Line a baking sheet with parchment paper or a silicone baking mat. Using a medium cookie scoop, scoop dough, shape into smooth balls and gently flatten slightly.

- When cookies have completely cooled, prepare frosting. In a medium bowl, mix together powdered sugar and butter until evenly dispersed. Add vanilla and 1 Tbsp milk or water at a time until desired icing consistency is reached.
- Frost cookies and immediately top off with sprinkles. Allow frosting to set or enjoy immediately. One frosting has set completely, store cookies in an airtight container.

Thank you so much for this recipe! I’ve been looking for a soft bake, vanilla cookie recipe for some time now, and for my son (Vanilla is his favorite!) and a soft baked style,( my husbands favorite), this definitely fit the part perfectly! Killing two birds with one stone! (so to speak) Awesome!
do you need to chill the in a fridge?
I made a batch, following your recipe exactly, and they were a huge hit with adults and children alike. Thanks for the recipe!

Love these! Homemade lofthouse are better in my opinion =)
does this dough turn into the consistency for rolling out and using cookie cutters?
These look incredible, can’t wait to try your recipe.
Just gorgeous, Rachel. And thanks for helping cover for K while she’s recuperating!
These are such pretty, cheerful cookies! Vanilla has always been my favorite! I have to bake these this week because 1. they look great and 2. I may be the only food blogger alive who has never eaten a lofthouse cookie! 🙂
These look delicious! I love lofthouse style cookies. Rachel, so sweet of you to fill in for Katrina.
Hi Em, Your first guess was correct. 2 1/4 = 2 tsp and 1/4 tsp not 1/4 twice 🙂 Thanks for double checking.
Love these! But, just to make sure…when you say 2 1/4 tsp baking powder, do you mean 2 teaspoons and then a 1/4? Or two 1/4 tsp of baking powder? Haha thank you!
Rachel, you ROCK! Beautiful cookies, girl! I adore vanilla, too. I despise when people say, “Oh, you mean…plain?” I’m like, “No. Vanilla!” Grrrr. Thank you for guest posting for Katrina and supporting her blog. You are a good friend. And, I’m so glad you thought of Lofthouse style cookies to meet Katrina’s request for something vanilla. Iced soft batch style frosted cookies are often overlooked…just like vanilla. For you, Katrina… {{{hugs}}} xo
Soft cookies are the best! And vanilla is a close 2nd to chocolate in my world, so these are great! I still haven’t made the Lofthouse cookies, so you are not alone 🙂
Hi Rachel! It’s possible that I’m the only one I know (and possibly alive?) that grabs the vanilla before the chocolate…not that I would ever turn down chocolate, mind you. So, um, love these! I’ll take 5, please.
