Why You’ll Love These Cupcakes

Kid-Friendly- Once you prepare and bake the cupcakes, even small children can tackle decorating Easter Peeps cupcakes. Even teenagers would love to decorate cupcakes and come up with variations using candy eggs and jelly beans.

Peeps- No Easter basket is complete without Peeps! They come in every spring pastel color you could think of these days.

Quick and Easy- You don’t even need to turn on your oven. Many grocery stores make flavorful cupcakes. You can keep these simple or use gel food color to make green coconut grass and dip the cupcake edges.

Ingredients

Cupcakes— Use homemade cupcakes or store-bought cupcakes if you don’t have time to bake your own in any flavor. We used chocolate cupcakes and yellow cupcakes. White cake would be delicious as well. This is our favorite cupcake recipe using sprinkles. You can even use a box cake mix! For an extra special treat try carrot cake cupcakes.

Peeps Marshmallow Chicks— Easter Bunny Peeps cupcakes are cute, but everyone uses marshmallow bunnies, so switch things up and make these adorable cupcakes using marshmallow chicks.

Frosting— If you are making your own crisping buttercream frosting, be sure to reserve a few teaspoons if you want to adhere the tail pieces to the bottom of some cupcakes. For this, you can unwrap the cupcake liners and adhere the tail to the bottom. You don’t need to limit yourself to white frosting.

Instructions

  1. FROST prepared cupcakes, or use store-bought cupcakes.
  2. CUT the head and tail off of your PEEPS marshmallow chicks.
  3. PLACE the Peep head on the cupcake and the tail to the back. Use additional frosting to adhere the tail pieces to the bottom of the cupcake if preferred.

Tips & Tricks

Make Ahead—You can prepare the cupcakes and frosting two days in advance. Store the cupcakes in an airtight container on the counter and the frosting in the refrigerator. Allow the frosting to come to room temperature before using a piping bag to pipe the swirl effect.

Storage—Store frosted cupcakes on the countertop for up to two days or in the refrigerator for up to four days. The Peeps may become firm on the outside if you have already decorated the cupcakes with them.
