These Mounds Brownies taste just like the candy bar. Start with a boxed brownie mix and end with a can of frosting, but the middle is totally homemade.
Somebody messed up. Really. What kind of marketing team sits back and takes a look at a Mounds Bar and an Almond Joy and calls the one with a mound on top of it Almond Joy? THERE’S A MOUND ON TOP OF THE ALMOND JOY!!!
I know- you are thinking I should really calm down about this. I’m not really that jazzed up about it but to tell the truth these are the things I sat around and thought about as a child. Even now as an adult I get the two candies confused. Now you know me a little better. Isn’t that nice?

Since mounds are dark chocolate, I used Hershey’s dark chocolate frosting!! Stuck with the fudge brownie, but did consider the dark chocolate brownie also! Must confess, I snitched a corner before it was completely cooled and set! YUM!!
I am lost everyone is looking for unsweetened coconut but the bag you show is sweetened and I don’t see anywhere in the recipe that calls for unsweetened.
Hello, Katrina… a really fab (and classic) combo. (I may have to “Almond Joy-ify” these – with rows of almonds under the icing – when I do give them a whirl. (And I’ll definitely “go ganache” on top.))
Am curious whether you’ve played with the coconut filling since developing your initial recipe. The idea of sweetened coconut, sweetened condensed milk AND powered sugar has me thinking twice, and I did see at least one other comment to this effect. (Please forgive my not reviewing the entire comment history for previous responses on this point.)

I think you could also do well using a ganache dark chocolate with this over the top of the coconut. Just a thought. Looks great though. I love the mounds candy bars but don’t care to much for the almond joy unless nut is removed…lol.
What kind of canned frosting did you use because canned frosting is usually yucky and yours doesn’t even look yucky.
Very sweet. Not one of my favorite recipes. I followed recipe exactly and it is just too sweet for us.
I don’t know how many times I’ve bit into an Mounds bar and was totally upset that there weren’t alMONDS!
Oh yes the icing I bought also was was Almond Joy Icing I was so surprised to find that and ir made them even better.
I love thesr but I add one more ingredient to the brownies and coconut and that ingredient was crushed up almonds cause I love almond joy’s so I made Almond Joy Brownies so thank you for the great recipe and everyone at work loved them for our desert swap
Good gravy. Just made these. Couldn’t even wait til the frosting cooled. They are much thinner than they look in the pic, but oh so amazing.

These look awesome. We love brownies and coconut. I will be making these as soon as I get to the store for ingredients. Only change I will make is the frosting, we do not like canned frosting at all so will have to make some homemade. Thanks for sharing such a yummy looking recipe.

A little memory back down the lane of long ago – I used to make Mound Candy with mashed potatoes, powdered sugar, vanilla and bittersweet chocolate. These look soooo much better.
Can I use homemade buttercream icing?

My daughter & I made these last night. She has just finished school & we decided that now would be a perfect time to sample them.
I have to say that these have earned a place in my “Favorite Recipes” box. They are simply incredible. The middle coconut layer really tastes like you scraped out the center of a Mounds Bar. I’m so impressed & will definitely have to limit how often I make these, because I feel like I could gobble up the whole batch! Lol. Thanks! 🙂

Hmm. I’m not sure. I think the opposite is usually the problem- it can be gooey. Perhaps try adding more milk, or less coconut? I have tested this recipe many times and never had that happen. I’m sorry!

Im making some for a get together tomorrow, except I like Almond Joy so I’m gonna throw a few almonds on the top before adding the frosting.
The melted frosting idea Ive been using for years… its the only way I frost cakes and brownies when using commercial frosting. I like the smooth almost fondant like texture it has when cooled down.

These are so timely! My husband bought some coconut M&Ms the other day as an incentive for my little one to night potty train. He keeps sneaking them (my husband) and I caught him at it. He said how much he loves mounds and I promised to make him a low carb version. But now I am thinking I should make mounds brownies instead!
I made these but I have a problem!!! I did use the can of sweetened condensed milk, unsweetened coconut (which is in the freezer section, people!) and the powdered sugar. I made them Sunday and followed the directions – I promise I did!! The problem is even in my refrigerator they are a liquidy gooey mess. DELICIOUS, but the condensed milk, coconut mixture is still very liquid. Mind you, this has NOT, I repeat NOT kept us from eating them; they just require a spoon!! Any suggestions? Am I the only one this happened to????

Hi Katrina, first time here from pinterest….just wanted to know how I can use fresh coconut as I live in the land of coconuts…and packet stuffs are almost unavailable…..so I cannot find coconut flakes here…..but there is plenty of fresh coconuts….any suggestions….love your space…and glad that I stumbled here…
Hi Nisa, I’m glad you’re here! I have never had the privilege of baking with fresh coconut so I’m sorry I can’t really offer any wisdom here. I would suggest shredding the coconut and squeezing out any excess coconut milk. From there you can sweeten to taste. Thanks again for stopping by! – Katrina

Hmm, so I think instead of icing ( since I am just not a fan of icing ) I will use melted chocolate chips,it will still set up and be amazing!! Hmm I got all this stuff in my cabinet now…. see ya!

I think I am going to try this, only I am going to modify them just a bit. First I am going to freeze them after the coconut mixture is put on the brownies. Then once they are frozen I am going to cut them into squares and dip or drizzle them with tempered chocolate.

Not sure if anyone has mentioned this….but I couldn't locate unsweetened coconut….so i used the sweetened kind and omitted the powdered sugar….everyone enjoyed just the same…..

I should mention that they did NOT go to waste! I took out a couple of cups of the coconut and proceeded as directed with the rest… they were a big hit, especially at work. L
Katrina, is the quantity correct for the coconut? 5 1/3 cups seemed like an awful lot and, when I made these, couldn't manage to get it all to combine with the condensed milk.

The recipe uses sweetened condensed milk so you're okay there. 🙂 A few other readers have left comments about not fibding unsweetened coconut. Some just omitted the powdered sugar while others reduced. Feel free to adjust the recipe to your taste. Good luck!
Problem. Making them right now. Can't find unsweetened coconut nor unsweetened condensed milk. So now I don't know what to do about the powdered sugar. Add or not? I went to a couple of stores. I found fat free condensed milk but not the unsweetened. HELP!

I refrigerated them just to be on the safe side, but either put them out in time so that they could come to room temperature or just warmed them up on defrost in the microwave for 30 seconds. And in goes without saying that they are delicious cold right out of the pan. If you did not refrigerate them, about how long did you have them out before they were all gone? Thanks for everything.
Hmm. That's a great question. (I'm glad you liked them!!) We didn't not refrigerate them however it does contain sweetened condensed milk which says to refrigerate after opening. I don't know! Let me put the question out to my facebook page and let's see what people say…
