I’m sick. Really sick. Pneumonia. I don’t mean to be a complainer but it stinks. I would say it makes me angry but few things truly make me angry. Thankfully I have family taking good care of me. After I finish my 5 minutes at the computer it’s back to bed.

My oven door may be closed for a little while but I thought I would give you a peek at a fun quick cake I made for my brother-in-law’s birthday recently. You could easily replicate it if you have an Angry Birds Lover in your family.

It all started at 6:30am. My son crawled into bed with me and I told him it was a special day because it was his uncle’s birthday. Without the slightest hesitation he said, “An Angry Birds cake would be perfect. What a great day this is going to be.” I wasn’t planning on making a cake but I knew I wanted to make it happen for my thoughtful son who wanted to give his uncle a thoughtful present. The best present is food, right?!

My goal was to accomplish this task without a trip to the store. I used a brownie mix from a box (gasp!) and cut out a circle using a bowl as my guide. Now let me assure you…I CANNOT DRAW! I knew this would be disastrous if I tried to freehand this thing so I pulled up a picture on the computer and enlarged it. Then I cut out the different pieces and traced around them with the frosting. Working with limited time and energy I didn’t even use piping bags and decorating tips. I tinted the canned frosting to my liking for each section, threw it in a Ziploc, cut off the tip, and whipped out a birthday present for my son to his uncle (they play Angry Birds together). Not the best cake ever but both my son and his uncle were equally pleased with the end result.

I hope you try this technique in your kitchen. Happy Baking! I may not see you for a while as I take time to get healthy.
