Peanut Butter Filled Buckeye Cupcakes recipe

My go-to dessert is undeniably cupcakes. Always a crowd pleaser, they are portable and perfectly portioned. You can even use a boxed mix to let the filling and frosting take center stage. These Peanut Butter Filled Buckeye Cupcakes are a show stopper on their own, but the real treat is waiting for you when you take a bite. That fluffy peanut butter filling is light and airy, and has an almost mousse-like texture. Top with a traditional candy buckeye if desired.

I’m sharing this recipe in partnership with Ohio Eggs and the Ohio State Buckeyes. You can also find this recipe for Peanut Butter Filled Buckeye Cupcakes on the Ohio Eggs website. I have done some work with them in the past including my favorite Buckeye Bark. I particularly love these cupcakes because of that peanut butter mousse filling. It’s so incredibly flavorful, you may find yourself sneaking seconds.

Filled with a light, creamy peanut butter filling and topped with a buckeye candy, these Peanut Butter Filled Buckeye Cupcakes are a show stopper!

Ingredients:

Cupcakes:

1 box chocolate cake mix (15.25 oz)

3 large eggs

1/2 cup butter (softened)

1 cup milk

24 peanut butter buckeyes (store bought or homemade, optional)

 Filling:

1/2 cup butter (softened)

1 cup peanut butter

1 cup powdered sugar

 Frosting:

1/2 cup butter (softened)

2/3 cup cocoa powder

3 cups powdered sugar

1/2 cup heavy cream or milk

1 teaspoon vanilla extract

Directions:

1. Preheat oven to 350 degrees F. In the bowl of your mixer combine cake mix, eggs, butter, and milk. Beat 2 minutes until smooth. Fill 24 cupcake liners 2/3 full with batter and bake 18-20 minutes. Let cool. Set aside.

2. In the bowl of an electric mixer combine ingredients for peanut butter filling until smooth and creamy. Place filling into a pastry bag if using. Set aside.

3. Using a small paring knife, cut out the centers of cupcakes. Alternately, insert and twist the wide end of a large metal piping tip to remove centers.

4. Fill the cupcakes with the peanut butter filling. Set aside.

5. Prepare the chocolate frosting by combining butter and cocoa. Slowly add powdered sugar then cream and vanilla. Use more or less cream as needed to meet desired consistency.

6. Frost filled cupcakes then top with buckeye candy if desired.
