Our children have completed the longest Spring Break in the history of the world. Whether kids are going back to school, attending virtual classes, or homeschooling, these Peanut Butter and Jelly Crunch Cups are the way to celebrate.
I don’t even know what to say about this back-to-school stuff except that teachers deserve all of our money, all of our votes, all of the coffee and wine, and all of everything. Those of you who are teaching AND parenting… well you deserve the most. This is hard!
I know in our house these peanut butter and jelly cups brought a few minutes of distraction and quite a few smiles. Older kids can make them pretty much unassisted as long as they can operate a microwave.
Younger children will enjoy stirring and scooping.
Adults and kids alike will enjoy snacking!
Peanut Butter and Jelly Crunch Cups
Here is what you need:
- Peanut butter- crunchy or smooth
- White chocolate- white chocolate melting discs are made specifically for melting and have the right amount of cocoa butter. Alternatively you could use Almond Bark.
- Puff rice cereal- such a Rice Krispies
- Jam or jelly- We used homemade Strawberry Freezer Jam and grape jelly.
- You could add a pinch of salt if your peanut butter is natural or salt-free.
Peanut butter and jelly cups are not a new invention, but I was unhappy with the recipes I followed. If you have made these in the past with coconut oil you will know that they melt the moment you take them out of your freezer. It was an not an enjoyable snack to eat. It was like eating a popsicle with your fingers and no stick.
However, my peanut butter cups use white chocolate and have the additional crunch of puff rice cereal. They are not only oozing with jam, but they have a bit of crispy texture as well. The white chocolate and peanut butter combination gives them a fudge-like quality.
Can I Make These Gluten-Free?
There are 4 ways you can make gluten-free Peanut Butter and Jelly Crunch Cups-
- Omit the puff rice cereal altogether.
- Swap out the Rice Krispies cereal for a gluten-free option like Corn Chex, or some Cheerios.
- Swap the cereal for crushed peanuts.
- Use crunchy peanut butter.
Peanut Butter and Jelly Crunch Cups
Ingredients
- 3/4 Cup peanut butter
- 1 Cup white chocolate, melted
- 1/2 Cup puff rice cereal, (Rice Krispies Cereal)
- 3/4 Cup jam, or jelly
Instructions
- LINE a muffin tin with 12 paper liners.
- COMBINE peanut butter with melted white chocolate in a small bowl and stir until smooth. ADD puff rice cereal; stir.
- SPREAD about 1 Tablespoon of peanut butter mixture in the bottom of each paper liner.
- TOP with about 1 Tablespoon of jam and then a second layer of the peanut butter mixture.
- CHILL for at least 20 minutes until the peanut butter has firmed up.
- STORE in an air-tight container for up to 1 week.
Notes
- You can omit the rice cereal.
- Add a pinch of salt if you are using a natural peanut butter.
- These can firm up on the counter top or you can chill them in the refrigerator, but they do not need to stay cold.
