Frozen Blueberry Basil Lemonade Pies Recipe

I know.

I KNOW that basil reminds you of lasagna. Trust me on this one: Blueberry Basil Lemonade is good! Add some Cool Whip and sweetened condensed milk and how could you go wrong?

Surely you have had frozen lemonade pie, right? This is just a fancy version all dressed up for a night on the town…or out in your back yard playing corn hole with friends. Whatever.

Blueberry Basil Lemonade Recipe

Basil is about the only thing that I can grow. Well, besides babies. I have 2 babies that I’m very proud of growing. But if we’re talking about green things with leaves and other stuff basil is about my limit. Since I have a short attention span I often forget about plants needing water and all that jazz so things go downhill very quickly, but basil is resilient. I really wanted to get into my basil crop early this year so I was anxiously awaiting those first tiny leaves. This is what I did with them.

If you are scared {or repulsed} by this idea then you can substitute mint for the basil or just omit it altogether. I won’t track you down. Promise.

Frozen Blueberry Basil Lemonade Mini Pies Recipe

Frozen lemonade pies with a hint of blueberry and basil

Ingredients

  • 8 oz Cool Whip, thawed
  • 14 oz can of sweetened condensed milk
  • 1 Cup frozen lemonade concentrate
  • 1/2 Cup blueberries
  • 2 fresh basil leaves, optional
  • Mini pie crusts, optional

Instructions
 

  • In a large bowl combine the Cool Whip and sweetened condensed milk. Then add the lemonade concentrate.
  • Add the blueberries (halve them if small children will be enjoying this dessert). Finely chop the basil and fold into the mixture.
  • Spoon the mixture into 12 mini pie crusts or small containers. Freeze for 5 hours or overnight.
