Fresh Fruit and Yogurt Cupcakes
June is National Dairy Month and I’m teaming up with the American Dairy Association Mideast to bring you this fun and healthy dairy inspired dessert.
Go ahead- have seconds! Why should cake have all the fun? These Fresh Fruit and Yogurt Cupcakes will steal the show at your next Summer get-together. I bet you won’t even miss the frosting!
Get yourself a watermelon and slice it up nice and thick. Use a round cookie cutter or small glass to cut it into circles. Top with some delicious frozen yogurt. That’s it! Oh but don’t forget the cherry on top!
If you’ve been with me for a while you may remember my Ohio Dairy Adventure with the American Dairy Association Mideast last Fall. It’s no secret that this girl loves her dairy. Since June is National Dairy Month I was happy to develop this recipe. I just love how sneaky it is. I mean my boys had no problem putting away a few of these and I had no problem with them eating fresh fruit and dairy.
I’m using this dairy trackng sheet with my boys this month so they can keep track of their 3 dairy servings a day. They are having so much fun with it!
Fresh Fruit and Yogurt Cupcakes
Ingredients
- Watermelon
- Frozen yogurt or ice cream
- Chocolate Ice Cream Topping
- Whipped Cream
- Cherries
Instructions
- Slice watermelon into thick rounds.
- Use a cookie cutter, biscuit cutter or small glass to cut watermelon into circles. Place into cupcake wrappers.
- Top with a scoop of vanilla frozen yogurt, chocolate topping, whipped cream, and a cherry.
A few DAIRY facts…
- Milk contains nine essential nutrients, making it one of the most nutrient-dense beverages you can enjoy! Milk is the single greatest source of three of the four nutrients the Dietary Guidelines identified as lacking in the American diet – calcium, vitamin D and potassium.
- Experts recommend three servings of low fat or fat-free dairy foods every day, yet most of us need to add one daily serving of nutrient-rich dairy to help meet recommendations.
- Studies show nutrient-rich dairy foods, when consumed as part of a healthy diet, may help to reduce the risk of diseases such as osteoporosis, hypertension, heart disease and type 2 diabetes.
- One milk group serving is equal to: An 8-ounce glass of milk; a 6- or 8-ounce container of yogurt; and 1½ ounces of natural cheese or 2 ounces of processed cheese.
