Tropical Vegan Smoothie and a Giveaway
I was recently contacted after being listed on Babble.com’s Readers’ Choice Top 100 Mommy Food Bloggers to be a blog tour stop for a new cookbook, Vegan Family Meals. I was given a complimentary copy of Ann Gentry’s new cookbook and have enjoyed reading every bit of it.
And I’m pleased to tell you that I have a copy for one lucky reader! While my family is not vegan, as a mom I am always striving to offer my family healthy, wholesome, and flavorful meals. This book is filled with beautiful pictures and easy recipes that your family will love. As Ann says in her introduction to the book,
“It’s not necessary to become vegan or vegetarian to enjoy the benefits of eating plant-based meals.”
The first thing I made when I opened my copy was Ann’s Tropical Smoothie. I had frozen papayas and mango chunks in the freezer so I knew it was a perfect choice. I was not disappointed. I am listing the recipe as it is in Vegan Family Meals but I did make one change. My grocery store does not carry coconut water so I substituted Silk PureCoconut milk. I love coconut milk and at only 80 calories per serving, it is a guilt-free treat!
Tropical Vegan Smoothie Recipe
Ingredients
- 1 11.2 oz container coconut water
- 1 ripe banana, peeled
- 1 C frozen pineapple chunks
- 1 C frozen papaya chunks
- ½ C frozen mango chunks
- 3 T soaked almonds
Instructions
- Blend all the ingredients in a blender until smooth. Serve immediately.

I'm a vegetarian and need new recipes for quick(ish) dinners with my family and by myself. I hadn't seen this book before but it looks great! So does the vegan smoothie– mango is my fav! Thanks for the great giveaway!

I once had a vegan strawberry smoothie, but it was made with soy milk. I didn't like the soy flavor so much. This one with coconut milk sounds so much better!
wow, that smoothie looks delicious. I don't think I've seen coconut water in the stores though. Coconut milk, coconut cream yes but not water. Obviously I haven't been looking in the right spots! 🙂

Oh my gosh that looks SO good! I've been wanting to be a vegetarian for awhile but I'm always afraid I'll run out of things to make and eat, but I'll have to try this. That cookbook would be fun to have.

I love coconut oil and use it often, but I have not cooked with coconut water before. This recipe sounds great. I am always looking for healthy recipes; this book sounds great.
I didn't even think to post the soaked almonds recipe! duh me! Soak them in a mason jar w enough water to cover by an inch for up to 24 hours before draining and replacing with clean water. Keep in the refrigerator for up to 2 weeks 🙂

This is a great looking smoothie. what's not to love with all the fruit and coconut milk. Yum. We ahve a vegan family member as well, so the cookbook would come in handy for sure.
I love coconut water, that's too bad you aren't able to find it near you. I'm sure it was just as delicious with the coconut milk and a little more decadent!
This looks so creamy and refreshing 🙂 Coconut water is always there in my refrigerator and i drink them almost every day during summer.
I used to pass up vegan recipes… however… my son recently became lactose intolerant and I've been turning to vegan meals and recipes as it is guaranteed to have no dairy. If we stick to vegan he is OK! And in the process I've been finding that vegan recipes are pretty darn goon! Love the book… I'll definitely be checking this on out!

We are a family of four and two of us are vegetarian and two are omnivores. We would like to incorporate more vegan recipes into our diet but have struggled finding recipes that were both nutritious and tasty. This recipe book looks like it would answer both problems. Holy cow, does this look good!?! I have recently heard a lot about coconut by products. My brother is swearing by coconut oil. Have you ever used it? Apparently it looks a lot like Crisco but melts like butter in a hot pan. Coconut is supposed to be good for you and contain a lot of healing properties but I haven't read much in the research. Have you? Isn't there a men's tennis player who drinks coconut water to replenish after a match? Thanks for the smoothie post. It looks delicious.

This smoothie sounds dreamy. I love tropical flavored food items because it takes me back to my favorite vacay spot… the beach!!! Such a great flavor combination. Healthy too, it's a winning recipe. Yummy! What a great giveaway and so very generous.
I'm not vegan either, but I love any kind of food that tastes great! The fact that it's healthy is a bonus. I do have a vegan family member, though…so always looking for things she can enjoy at dinner.

Oh how I love coconut water, YUM. I don't live in the U.S. so I can't enter, but just wanted to post and say the smoothie looks and sounds so good, and I also love using wood in the background of photos! Will definitely check out the cookbook the next time I'm at the bookstore. Just to make sure though, do you use whole almonds, or sliced or slivered, or…?

My brother use to be vegan – it's a lot harder than some think depending on where you live. Plus you've got to really be open to trying new things. Probably easier to try out on unsuspecting people lol
