They usually don’t last long around our house but they will keep for up to a week stored in a resealable plastic bag in the refrigerator.

Pumpkin Chocolate Chip Granola Bars

Ingredients

  • 2 cups oats - old fashioned or quick cooking
  • 1/2 cup chopped walnuts
  • 1/2 cup flax seed meal
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup pure pumpkin
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 1/2 cup chocolate chips

Instructions
 

  • Pre-heat oven to 350 degrees and spray an 8 x 8 baking pan with non-stick cooking spray.
  • In a large bowl, stir together dry ingredients: oats through ground cloves.
  • In a medium bowl, whisk wet ingredients: pumpkin through vanilla. Slowly add the wet ingredients to the dry ingredients and mix until combined.
  • Stir chocolate chips into the mixture then pour into prepared baking pan. Bake for 25 minutes or until lightly browned.
  • Let bars cool completely before slicing.
