Pumpkin Chocolate Chip Granola Bars
Hi Everyone! My name is Liz and I’m a healthy food blogger over at The Lemon Bowl. I am so honored to be guest posting for my friend Katrina today. While so many of my blogging friendships are virtual, I’ve had two wonderful opportunities to get to know Katrina in real life – first during last year’s Ohio Dairy Adventure and most recently at Food Blog Forum in Orlando earlier this year.
If you’ve never met Katrina in real life, let me assure you she is just as sweet and kind as you would imagine – probably even more than you could imagine! She is a true gem and I feel lucky to call her a friend and colleague.

Let’s talk about these Pumpkin Chocolate Chip Granola Bars for a moment. Chewy, chocolatey and packed with pumpkin flavor – these hearty granola bars are perfect for brown bag lunches, stashing in your car or serving as an after school snack.
They usually don’t last long around our house but they will keep for up to a week stored in a resealable plastic bag in the refrigerator.

Pumpkin Chocolate Chip Granola Bars
Ingredients
- 2 cups oats - old fashioned or quick cooking
- 1/2 cup chopped walnuts
- 1/2 cup flax seed meal
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 cup pure pumpkin
- 1/2 cup unsweetened applesauce
- 1/2 cup honey
- 1 teaspoon vanilla
- 1/2 cup chocolate chips
Instructions
- Pre-heat oven to 350 degrees and spray an 8 x 8 baking pan with non-stick cooking spray.
- In a large bowl, stir together dry ingredients: oats through ground cloves.
- In a medium bowl, whisk wet ingredients: pumpkin through vanilla. Slowly add the wet ingredients to the dry ingredients and mix until combined.
- Stir chocolate chips into the mixture then pour into prepared baking pan. Bake for 25 minutes or until lightly browned.
- Let bars cool completely before slicing.
