So I have this oatmeal problem. I hate it.

I have tried and tried time and again to become an eater of oatmeal. I even convinced my husband to eat it for a few months. It goes down the same way each time I renew my oatmeal vows. I decide I should like oatmeal. I purchase oatmeal, prepare it, and feel like an adult for a few days. I have to wait for it to cool almost completely and thicken up before I can handle the consistency enough to force feed myself. Without fail the day comes when I forget about my cooling oatmeal until it becomes even less edible than it was in the first place. I man up and eat it anyway and become so disgusted with it that I swear I will never eat oatmeal again.

So I am breaking up with oatmeal.

Now let’s talk about bread. I like bread. I like baking bread. I get a little bit giddy when I see the yeast getting bubbly and when the aroma fills my house. I started out making my go-to oatmeal bread recipe and then I decided to bump up the flavor with some Nutella. Since I threw in the Nutella I also topped it with a brown sugar honey glaze before baking. It caramelized perfectly and made a sweet and crisp crust. I have made this bread for years and years without the Nutella and sweet glaze so if you want a more traditional loaf simply omit the Nutella and glaze. The traditional oatmeal bread is a favorite of my family- especially at Thanksgiving.

Classic oatmeal bread with Nutella and honey

Ingredients

  • For the Bread:
  • 1 Cup quick oats
  • 1/2 Cup whole wheat flour
  • 1/2 Cup brown sugar
  • 1 Tablespoon salt
  • 2 Tablespoons butter
  • 1/2 Cup Nutella
  • 1 Cups boiling water
  • 2 1/2 teaspoons yeast, 1 packet
  • 1/2 Cup warm water
  • 5 Cups flour
  • For the Glaze:
  • 2 Tablespoons butter, melted
  • 2 Tablespoons honey
  • 2 Tablespoons brown sugar
  • Oats, optional, for garnish

Instructions
 

  • In a large bowl pour boiling water over oats, whole wheat flour, brown sugar, salt, and butter, and Nutella. Stir until combined. Let cool to lukewarm.
  • While batter is cooling combine yeast with warm water and let sit for 5 minutes. Combine with batter.
  • Stir in flour 1/2 cup at a time until the dough is stiff enough to turn out to a floured work surface. Continue to knead in remaining flour for 5-10 minutes.
  • Place in a greased bowl and let rise 1 hour until doubled.
  • Punch dough down and let rise again (about 30 minutes).
  • Preheat oven to 350. Shape into 2 loaves and place in greased loaf pans.
  • Prepare glaze. Slice loaves and pour glaze over top. Garnish with more oats if desired.
  • Bake at 350 for 30-40 minutes.
