Hello everybody! I’m so happy to be a guest here and part of such a fun cookie party! It was not difficult for me to sign up for the final week of baking. You see, I’m all about last minute. Not so much the procrastination part. No, I do stuff way in advance. But given I feel like I’m always crazy busy, I’m always motivated by “What can I bake that’s fast and easy?” After spending a decade decorating elaborate and detailed cookies for my job (think major appliances and human organs and people’s dogs in weird poses…), it’s almost an addiction now to spend as little time as possible on a cookie and still have others be impressed by how long (they think) it must have taken.

So if you’re in a rush this week, and if you need some cute morsels of sweet cookie goodness that you can decorate in no time at all, then I made these for you. Cranberry cookies! Just bite-size circles topped with icing and sprinkles. That’s it. And sprinkles hide all icing imperfections, so these are an especially good choice for first-time cookie decorators. Fill mason jars for gifts, put out bowlfuls after Christmas dinner, throw at your kids… All so easy.

I tried these out with both white sprinkles and red sprinkles. I think I’m voting for the white sprinkles, for that snowy, wintery look. And you know what would really push these over the top? Add some cranberry extract to the dough. Yep, it exists.

Instructions:

1. step one: bake your cookies Prepare cookie dough according to the recipe. If desired, add 1 1/2 teaspoons of flavored extract, such as raspberry or cranberry, along with the 1 teaspoon of vanilla extract. Chill dough for two hours. Knead drops of red food coloring very well into dough, adding more as needed to turn dough red. Roll out about 1/4 inch thick on a floured surface, cut out mini circles and bake according to the recipe. Let cool.

2. step two: prepare your icing Prepare royal icing and tint red. Prepare a decorating bag with coupler and tip, fill with the icing and close tightly with a rubber band.

3. step three: decorate your cookies Pour sprinkles in a shallow bowl. Working with one cookie at a time, pipe a circle on a cookie, and pipe icing to fill the circle. Holding the cookie on the sides, overturn and dip the top of the cookie in the sprinkles to completely coat the icing with sprinkles. Set on a tray to dry overnight.

Tiny red cranberry cookies, sprinkled with sugar

Ingredients

  • cookie dough
  • royal icing
  • small circle cookie or fondant cutter
  • red food coloring
  • 1 decorating bag
  • 1 coupler
  • 1 decorating tip, size "5"
  • rubber band
  • white or red sprinkles or sanding sugar
