2cupspowdered sugar
¼cupheavy cream
1teaspooncoconut emulsionor extract

Instructions
For the cookies:
Beat butter and sugar until smooth Add egg and mix until incorporated then add in vanilla, coconut flavorings
Mix in flour along with baking powder and salt. Mix until dough pulls away from sides of bowl.
Place 3 tablespoons of dough into each section of a deep dish cookie pan. Press down the dough with a smooth item, like the bottom of a ½ cup measuring cup dipped in flour.
Bake at 375 degrees for 10 minutes or until centers are set and edges are golden.
For the Frosting:
Beat butter until smooth.
Add powdered sugar and mix until incorporated on medium low speed.
Add in the heavy cream, coconut emulsion and white coloring and whip on high speed until it’s very smooth and creamy.
Assembly: Pipe frosting onto cooled cookies with a piping bag fitted with a star tip, I use a 2D tip. Top with coconut.
