Peppermint Snowball Cookies Recipe
Yield: 3 dozen cookies
Fluffy cookies covered in white chocolate and crushed candy canes
- 1/2 c. butter softened
- 1 c. powdered sugar
- 1 egg
- 1/2 tsp. peppermint extract
- 1/2 tsp. vanilla
- 1/4 tsp. salt
- 2 1/2 c. flour
- 4 oz. white chocolate bark Candiquik
- 8 whole candy canes smashed into chunks
Stir together salt and flour. Beat butter and sugar in a large bowl until creamy. Beat in egg and extracts.
On low speed, beat in the flour mixture.
Wrap the dough in plastic wrap and refrigerate at least 1 hour.
Preheat oven to 350°F.
Shape dough into 1 inch balls and bake on greased baking sheets. Bake 10-12 minutes. Move cookies to a wire rack to cool completely.
Melt chocolate. Dip the tops of the cookies into the chocolate and roll in crushed candy canes. Place on waxed paper to harden.
