White Christmas Pie Cookies Recipe

Deep dish cookies with a fluffy coconut frosting

  • For the Cookies:
  • 1 cup butter
  • 1 ½ cups granulated sugar
  • 1 egg 1 teaspoon vanilla
  • 1 teaspoon coconut emulsion or extract
  • 3 cups flour
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup shredded coconut for topping
  • For the Frosting:
  • 1 cup butter room temperature but still firm when pressed
  • 2 cups powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon coconut emulsion or extract
  • 6 drops white food coloring I use Americolor


  • For the cookies:
  • Beat butter and sugar until smooth Add egg and mix until incorporated then add in vanilla, coconut flavorings
  • Mix in flour along with baking powder and salt. Mix until dough pulls away from sides of bowl.
  • Place 3 tablespoons of dough into each section of a deep dish cookie pan. Press down the dough with a smooth item, like the bottom of a ½ cup measuring cup dipped in flour.
  • Bake at 375 degrees for 10 minutes or until centers are set and edges are golden.
  • For the Frosting:
  • Beat butter until smooth.
  • Add powdered sugar and mix until incorporated on medium low speed.
  • Add in the heavy cream, coconut emulsion and white coloring and whip on high speed until it’s very smooth and creamy.
  • Assembly: Pipe frosting onto cooled cookies with a piping bag fitted with a star tip, I use a 2D tip. Top with coconut.
