Best Homemade Eggnog

- 6 large eggs
- ¼ cup sugar
- ¼ teaspoon salt
- 4 cups whole milk divided
- 1 teaspoon vanilla extract
- 10-12 cinnamon sticks
- Whipped cream optional for garnish
- Pinch of ground cinnamon optional for garnish
- Pinch of ground nutmeg optional for garnish
In a large heavy saucepan beat eggs, sugar, and salt until blended. Stir in 2 cups of milk.
Cook over low heat, stirring slowly and constantly until mixture is thick enough to coat a metal spoon with a thin film (about 10-15 minutes). The temperature should read 160°F. Do not allow to boil.
Remove from heat and stir in remaining 2 cups milk then vanilla. Optional- For perfectly smooth eggnog pour through a sieve or cheesecloth before chilling.
Refrigerate in an air-tight container 2 hours or overnight.
