  • 6 large eggs
  • ¼ cup sugar
  • ¼ teaspoon salt
  • 4 cups whole milk divided
  • 1 teaspoon vanilla extract
  • 10-12 cinnamon sticks
  • Whipped cream optional for garnish
  • Pinch of ground cinnamon optional for garnish
  • Pinch of ground nutmeg optional for garnish


  • In a large heavy saucepan beat eggs, sugar, and salt until blended. Stir in 2 cups of milk.
  • Cook over low heat, stirring slowly and constantly until mixture is thick enough to coat a metal spoon with a thin film (about 10-15 minutes). The temperature should read 160°F. Do not allow to boil.
  • Remove from heat and stir in remaining 2 cups milk then vanilla. Optional- For perfectly smooth eggnog pour through a sieve or cheesecloth before chilling.
  • Refrigerate in an air-tight container 2 hours or overnight.
