Rise and Shine Skinny Coffee Smoothie
Start your morning off with a Skinny Coffee Smoothie. Packed with bananas and coconut milk, these smoothies are vegan, dairy-free, and naturally gluten-free.
I don’t always eat cupcakes for breakfast.
Sometimes I drink coffee.
Coffee Smoothie Substitutions
- This recipe uses coconut milk but you can use whichever dairy you prefer (cows milk, chocolate milk, oat milk, almond milk, etc.).
- You can add more or less coconut flakes depending on the sweetness level you prefer.
- I like to add about 1/2 cup of ice but if you like a thicker smoothie feel free to add more.
- A Tablespoon or two of almond butter would bump up the protein and be a delicious addition!
My son celebrated his 7th birthday this week and I totally had cupcakes for breakfast. More than once.
Here’s a fun fact: My kid didn’t even eat a piece of cake at his own birthday party. I made super – crazy – awesome cupcakes with green and blue frosting piled high, and I had to coerce him to pose for a picture with one.
Naturally I had to eat all the frosted, leftover cupcakes. When those ran out I returned to my usual cup of coffee routine.
My usual cup of coffee is a splash of coffee with my cream and sugar. So I decided to add a few bananas and coconut milk for a more filling option. Throw in some Greek yogurt or use whatever milk your family drinks. Smoothie recipe rules are made to be broken.
And eat cake for breakfast. Sometimes.
Rise and Shine Skinny Coffee Smoothie
Ingredients
- 2 bananas
- 1/2 cup coffee, cold or room temperature
- 1/4 cup coconut milk, or whichever milk you prefer
- 3 Tablesppons coconut flakes
- 1/2 cup ice, (or more depending on desired thickness)
Instructions
- Place all ingredients in a blender or food processor and pulse until smooth.
- Garnish with flaked coconut or a swirl of chocolate syrup if desired.

I agree, Ali! Love this smoothie so much. Today I halved the recipe, used unsweetened coconut milk, threw in some cashews for protein, cocao powder and added a touch of vanilla & cinnamon. Great breakfast treat.

I’m super excited to try this! And if your using weight watchers this is totally skinny. Coffee plain and bananas are free, or zero points. There would only be points for the coconut milk. And even that is only 1 point for a whole cup. So this concoction is basically 0 points! PERFECT!!!!

I wish people would start counting chemicals and stop counting calories. No one has ever gotten fat from eating too many bananas 😉

I haven’t tried it with this smoothie in particular but I’m always up for throwing in a handful of spinach… just ask my kiddos 😉 ha!
Ashley – I plugged the recipe in to the recipe builder at My Fitness Pal and I’d hardly call it “skinny.” Assuming 2 medium sized bananas (225g total weight, peeled), 1/2 cup brewed coffee, 1/4 cup Silk Coconut Milk and 2 Tbsp of coconut flakes, it comes out to 291 calories a serving! And only 2g protein, 6g fat, 61(!!)g carbs and 9g fiber.
Hi Sarah. I always appreciate hearing from readers here. Just to point out that this made 2 smoothies, making it under 150 calories per serving and even less if you do not add the optional coconut flakes. I can call that “skinny” and we’ll have to agree to disagree on this one.
I can see where my labeling a recipe as “skinny” could potentially be frustrating because everyone has different health goals. However this smoothie recipe uses whole foods and no chemical sweeteners. I personally feel refreshed after drinking this following a good workout. And I don’t mind a glass of coffee and coconut milk from time to time; adding a banana and a few ice cubes makes it even more delicious and filling! Thanks again for taking the time to comment.

Do you think this would work with the liquid of canned coconut milk? I need the cream for coconut ice-cream, but I’m hoping to use the liquid in other ways. Like this smoothie. 🙂

Hi Angela. My cupcakes were not gluten-free, but I’m sure that you can find a recipe that meets your needs. We have a peanut allergy in our home, so I know what it is to find recipes that are a good fit for our family. Mostly my Skylanders cupcakes used the swirled frosting technique in white, blue, and green frosting. This sounds great, Katrina! I agree completely with you about smoothie rules being made to be broken. I never use a recipe for my smoothies, but they almost always come out great… unless they’re green smoothies. Still working on getting the proportions right on that. Thanks so much for sharing.

I freeze leftover coffee in an icecube tray and use that instead of regular cubes. Less watery! Also if you freeze bananas (sliced) then you don’t need to add ice!
