I made these tonight and had a snag with the topping. I may have cooked it too long, or it may have been the type of caramel I used. I had kraft caramel "bits", not the individually wrapped candies. The topping melted up nicely, it tasted great out of the pot and it worked well on the cookies. But, after it was cooled completely, it was hard as a rock and broke off the cookie. I am going to try the recipe again with wrapped candies and hope it stays gooey.

I actually used your recipe and adapted it to make homemade samoa doughnuts for breakfast. I posted the recipe on my blog. They were delicious! Thanks for sharing and the inspiration!

www.piecelovecooking.com

Katrina, I think I love you for sharing thus recipe of a home-made samoa. No girl scouts come a-knockin' on my door in New York. Why is that? This just made my day a little brighter.

Samoas are my favorite Girl Scout cookie, but I've steered clear after I once read the calorie count on the box. I'm going to fool myself into thinking there are no calories in these cookies. No box, no calories, right?
