im very interested in making these cookies but am a little confused..you used 2 boxes of cake mix for these cookies, so if I was just making the cookies with one box, would I still use both eggs? Or is that only if
I make a double batch? Thank you!

So quick question… If I use the quick crusting buttercream, do I add the peppermint extract in addition to the other extracts already in it? Or is the peppermint extract the substitute for the almond and vanilla? Dumb question… but just wanted to make sure.

Hi! I made these cookies tonight 🙂 I didn’t try the frosting yet — I’m trying to pick a cookie recipe for Christmas gifting and this is the second one I’ve test-run in my kitchen! I used a yellow cake mix because that’s what I had on hand, and it made very pretty, perfectly chewy cookies! I initially used my cookie scoop, but it made WAY too big cookies which spread all over the pan. I lowered the temperature to 325 (my oven runs hot anyway) and scooped out 1 tbsp-size cookies, which turned out perfectly! Thank you!
