It seems to me that this has been the holiday season of cookies. Maybe you feel like that every holiday season but for one reason or another, I feel like cookies have been everywhere this year. Am I complaining? Um, no. Not in the least. I love cookies. I love cookie dough. I love coming up with new and fun flavor combinations. But I found myself completely stuck recently when brainstorming cookie ideas. Certainly you have noticed the title of this post, so you know what I came up with. And by the name, you might be tempted to just close the browser and wait for tomorrow’s recipe, but just wait. I promise you this recipe is worth hanging around.

But first, let me tell you where I got this idea: I grew up in a small town in Southeast Kansas. It’s a simple town but boasts much character, including an 1800’s Fort and a downtown with lots of charm. Included in that charm are two (twin) Victorian mansions on the city’s main road. The mansions are now a family-run bed and breakfast and when I was in middle school and into high school, I worked there. I checked guests in, cleaned, did laundry, decorated, helped serve meals, and sometimes helped cook the meals. Miss Pat, the innkeeper was an incredible cook. She prepared multiple-course Victorian dinners on beautiful china in the mansion’s formal dining room.

She thought of every detail: the candles, the china, the decorations. Her food was incredible but dessert is what I always waited for. She most-often served strawberry sorbet but the highlight of dessert, for me anyway, was the coffee she served. It was no ordinary coffee. The beans were, maybe, but she added a little sprinkle of ground cinnamon and a few whole cloves to the grounds, brewed the coffee, and her kitchen always smelled like the holidays to me. Anytime I smell cinnamon and cloves together, I think of Miss Pat and her kitchen in my hometown. And you can bet that these cookies took me right back to her kitchen, too.

Cinnamon Clove Coffee Cookies Recipe


Yield: 3-dozen cookies

Prep Time:15 minutes

Cook Time:14 minutes

Total Time:29 minutes

Chewy, sugary cookie with spicy cinnamon, cloves, and rich coffee flavor


  • 2 1/4 cups unbleached bread flour (I use King Arthur)
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1/4 tsp. salt
  • 1 cup butter, room temperature
  • 1 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 tsp. vanilla extract
  • 1 Tbs. fresh coffee grounds


  1. Preheat oven to 350 degrees. Line two large cookie sheets with parchment or Silpat liners. Set aside.
  2. In a large bowl, mix the flour, baking powder, cinnamon, cloves and salt together and set aside. In the bowl of a stand mixer, cream the butter and sugar until light in color, fluffy and airy, about 3 minutes. Add the eggs, one at a time, mixing until fully incorporated and then add the vanilla.
  3. Slowly add the dry ingredients and mix just until combined, and until no white streaks remain. Stir in the coffee grounds and mixed until fully distributed throughout the dough. Place the dough, in 1-inch balls, about 2-inches apart on the cookie sheets.
  4. Bake for 12-14 minutes until lightly browned on the edges but soft in the middle. Cook for a few minutes on the cookie sheet, and then cool completely on a wire rack.


I prefer bread flour in cookies (and lots of recipes) versus all-purpose. The extra protein in bread flour helps to bind to all of the butter in these cookies. All-purpose flour can be subbed for the bread flour, just add 3-4 more tablespoons. Make sure to use actual (unused) coffee grounds in this recipe, not instant coffee or instant espresso. Both will just dissolve in the recipe and you won't get the rich coffee flavor that I loved most about these cookies.
