These were quite tasty and crisp.

I did notice that the cookies puff more of using parchment paper vs. a silicone mat (I only had 3 mats but I was using for cookie trays).

Do make sure to leave a 2" space between cookies since these spread a lot.

I did make one mistake, that I realized after I was done baking. I used 3 tablespoonsful of coffee instead of one, but they tasted just fine.

My yield was 68 cookies using a 1.25" scoop, leveled off.

You use unused coffee grounds. Of using instant coffee it will be more coffee tasting and you should probably only use ~1 teaspoon, if that.

These are AMAZING cookies. I make them in the fall and at the holidays primarily with so many sweets and candies flying around, these are a nice break. I enjoy these anytime, but with a cup of coffee they're divine, though I wouldn't dip them. Full disclosure, my last batch I mistakenly used baking soda instead of powder, oops. Other than flattening out the cookie vs the small dome they normally have there was no impact to the flavor. Using a cookie scoop leveled on the edge of the bowl this recipe yields 3 dozen for me.

I thank you for this delicous recipe. I did not having much for ingredients at home and needed another type of cookie for a Christmas cookie tray. This has saved me and I really like the flavor and I was happy to see something without chocolate.
