Hey guys! I’m Rachel from Baked by Rachel. I’m happy to be filling in for Katrina while she’s out of the kitchen. I know we’re all hoping to see her back to creating fun recipes real soon! When I was deciding what to make, I wanted it to be super special. I asked Katrina what her absolute favorite dessert is. She surprised me by saying just about anything vanilla. I think vanilla is often overlooked. People jump to chocolate or even pumpkin when it comes to this time of year, but vanilla? Poor vanilla. It’s delicious, so let’s not forget it – k?

I knew instantly what I wanted to make after she made her vanilla declaration. Lofthouse style cookies. I’ve seen them all over the place but I’d never made one. And lately I’m on a total cookie fix… from soft batch pumpkin chocolate chip cookies to perfect s’more cookies and much more, so it seemed fitting to finally tackle the cookies I swear I’m the last to make. But I took it a step further. I couldn’t stop at just making a vanilla version, nope… I made a pumpkin version too! But you’ll have to stop by to grab that recipe!

These cookies lived up to every expectation one might have for a soft batch vanilla cookie. They’re soft and fluffy while having the perfect amount of vanilla flavor. Making these extra special is the vanilla frosting and rainbow sprinkles. My kids were especially fond of the sprinkles for obvious reason. Can’t say I blame them one bit.

A Lofthouse style cookie recipe. Fluffy and soft vanilla cookies with vanilla frosting. A classic recipe you’re sure to love!

Ingredients:

Cookie Ingredients:

  • 3/4C unsalted butter, softened
  • 3/4C granulated sugar
  • 1 egg
  • 1 egg yolk
  • 2 1/4 tsp vanilla extract
  • 1/2 tsp salt
  • 2 1/4 tsp baking powder
  • 2 1/4C all purpose flour

Frosting Ingredients:

  • 2 1/2C powdered sugar
  • 2-3 Tbsp unsalted butter, softened
  • 1/2 Tbsp vanilla extract
  • 3-4 Tbsp milk or water

Topping:

  • Sprinkles

Directions:

  1. In a large bowl or stand mixer, cream together butter and granulated sugar. Mix in egg, egg yolk and vanilla. When mixture is barely combined, add salt, baking powder and flour. Mix until no streaks remain and batter is lump free.
  2. Cover and chill for at least one hour.
  3. Preheat oven to 350°F.
  4. Line a baking sheet with parchment paper or a silicone baking mat. Using a medium cookie scoop, scoop dough, shape into smooth balls and gently flatten slightly.
  5. Bake for 10-11 minutes. Allow cookies to rest on baking sheet for 1 minute prior to transferring to a wire rack to cool completely.
  6. When cookies have completely cooled, prepare frosting. In a medium bowl, mix together powdered sugar and butter until evenly dispersed. Add vanilla and 1 Tbsp milk or water at a time until desired icing consistency is reached.
  7. Frost cookies and immediately top off with sprinkles. Allow frosting to set or enjoy immediately. One frosting has set completely, store cookies in an airtight container.
