Biscoff Truffles

Peanut butter buckeyes are a tradition in my family. In fact I am still using the recipe that my husband’s grandmother wrote down from her friend Olga in 1963.

This year was a little different because my son was diagnosed with a peanut allergy last winter and we are all learning how to welcome the holidays peanut free. One way I have continued baking our favorites through the year is by substituting Biscoff spread in my favorite peanut butter recipes. I have a slight obsession with this sweet creamy alternative. You won’t miss the peanut butter in these truffles and I’m sure that this little twist will delight your taste buds!

We are just starting to get to know each other and it would be weird if she found out I didn’t have any Internetland friends. So go say howdy (she’s from Texas so she’ll like that) and grab the recipe for my Biscoff Truffles!

People are always askng why I bake so much around this time of year. Isn’t it stressful? What do you DO with all of the cookies/treats/etc? How do you find the time to bake with small kids inthe house? Well I just simply love it. I find rolling cookes, truffles, etc so calming and fun especially when I’m baking with friends or family. I’m often streaming Christmas music and the kids and we dance and sing in silly voices. This year I’ve enjoyed my LG Intuition from Verizon to listen to Christmas music stations. I also like that I can pop over to my favorite blogs to check on a recipe or baking tip, and since it’s a phablet (phone + tablet) I can take a quick pic of my flour-covered kids and send it off to my parents or husband.

    I can NOT believe you posted a Biscoff recipe today. My son literally just ask me this morning when I was going to make something with "all that cookie spread" that I may or may not be hoarding in my pantry. I think I know what I'll be doing tomorrow… ;-)

    I was recently diagnosed with an almond and cashew allergy. Not nearly as bad as peanut, but I'm not happy.

    ooo I have biscoff at home. I have not opened this jar since I would eat it all. But this would be a perfect excuse to open up the jar and make these. lovely

    My nephew was just diagnosed with a peanut allergy. I love your idea of substituting the peanut butter in your buckeyes with Biscoff spread–genius! I will be making a batch for my nephew this Christmas.

    These look soooooo good! I love making candy to give as gifts during the holidays (one of my favorites is chocolate chip cookie dough truffles) , so this recipe fits the bill perfectly!
